Austin Publicover has held the Certified in Comprehensive Food Safety (CCFS) and the Certified Professional in Food Safety (CP-FS) credentials, is an International HACCP Alliance lead instructor, a Seafood HACCP lead instructor, a Preventive Controls Qualified Individual (PCQI) and a PCQI Lead Instructor. He has earned several other HACCP certificates, including juice HACCP (Cornell University), seafood HACCP (University of Connecticut), Foreign Supplier Verification Program certification (FSPCA), and general HACCP (Texas A&M via IHA). 2008 - 2014: Austin worked as an operations manager in the corporate structure of Danny Meyer’s Union Square Hospitality Group, overseeing food safety for restaurants as diverse as Gramercy Tavern, The Modern at MoMA, and Shake Shack.

2013 to 2020: Austin ran Bulletproof! Food Safety: 614 repeat clients, more than 950 restaurant kitchens inspected, greater than 1,500 food workers trained. At Bulletproof, Austin also handled HACCP for breaded poultry, gelati, confections, smoked salmon, tortillas, fermented hot sauce, hot-filled salsa, ROP retail, imported bottled water, HPP’d pesto sauce, and lots of fruit and vegetable juices.

2020 onward: Austin formed (( ENDOCARP )) to address larger compliance needs in artisan manufacturing and consumer packaged goods.
